Clorofila \u00eens\u0103 este un semn c\u0103 \u00een acea zon\u0103 s-a declan\u0219at \u0219i un alt proces chimic: <strong>sinteza de solanin\u0103<\/strong>, un compus care poate deveni toxic pentru organismul uman.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"solanina\"><strong>Ce este solanina \u0219i ce rol are<\/strong><\/h3>\n\n\n\n<p><strong>Solanina<\/strong> este o substan\u021b\u0103 natural\u0103, mai exact, un glicoalcaloid, produs\u0103 de cartofi \u0219i alte plante din familia Solanaceae (precum ro\u0219iile sau vinetele) ca metod\u0103 de ap\u0103rare \u00eempotriva d\u0103un\u0103torilor. \u00cen cantit\u0103\u021bi mici, solanina nu prezint\u0103 pericol. Problema apare atunci c\u00e2nd concentra\u021bia devine mare, lucru care se \u00eent\u00e2mpl\u0103 mai ales la <strong>cartofii verzi<\/strong>, \u00een <strong>coaj\u0103<\/strong>, \u00een <strong>zonele \u00eencol\u021bite<\/strong> \u0219i \u00een <strong>muguri<\/strong>.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>C\u00e2t\u0103 solanin\u0103 este prea mult\u0103<\/strong><\/h3>\n\n\n\n<p>Cantitatea de solanin\u0103 considerat\u0103 toxic\u0103 pentru oameni este de aproximativ <strong>2\u20135 mg\/kg corp<\/strong>, iar cea poten\u021bial letal\u0103 este de <strong>3\u20136 mg\/kg<\/strong>. Pentru un adult de 70 kg, doza toxic\u0103 se situeaz\u0103 \u00een jurul valorii de <strong>140\u2013350 mg<\/strong>, iar cea letal\u0103 \u00eentre <strong>210\u2013420 mg<\/strong>.<\/p>\n\n\n\n<p>\u00cen mod normal, un cartof s\u0103n\u0103tos con\u021bine <strong>sub 10 mg de solanin\u0103 la 100 g<\/strong>, dar un cartof verde sau \u00eencol\u021bit poate ajunge la peste <strong>100 mg\/100 g<\/strong> \u00een zonele afectate. Asta \u00eenseamn\u0103 c\u0103 dac\u0103 ai consuma 200\u2013300 g de cartofi verzi, <strong>\u00een special cu coaj\u0103 \u0219i muguri<\/strong>, ai putea atinge cu u\u0219urin\u021b\u0103 o <strong>doz\u0103 periculos de mare<\/strong> de solanin\u0103.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Ce simptome provoac\u0103 solanina?<\/strong><\/h3>\n\n\n\n<p>Intoxica\u021bia cu solanin\u0103 poate ap\u0103rea la c\u00e2teva ore dup\u0103 consum \u0219i se manifest\u0103 prin:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Grea\u021b\u0103<\/li>\n\n\n\n<li>V\u0103rs\u0103turi<\/li>\n\n\n\n<li>Crampe abdominale<\/li>\n\n\n\n<li>Diaree<\/li>\n\n\n\n<li>Ame\u021beli<\/li>\n\n\n\n<li>Dureri de cap<\/li>\n<\/ul>\n\n\n\n<p>\u00cen cazurile mai grave, pot ap\u0103rea simptome neurologice precum halucina\u021bii, convulsii, chiar \u0219i pierderea con\u0219tien\u021bei. De\u0219i cazurile letale sunt extrem de rare, simptomele severe nu sunt de neglijat, mai ales la copii, b\u0103tr\u00e2ni sau persoane cu un sistem imunitar sl\u0103bit.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Se distruge solanina prin fierbere sau coacere?<\/strong><\/h3>\n\n\n\n<p>Din p\u0103cate, <strong>solanina nu este distrus\u0103 complet prin g\u0103tit<\/strong>. Fierberea, coacerea sau pr\u0103jirea nu reduc suficient cantitatea de substan\u021b\u0103 toxic\u0103. Singura solu\u021bie sigur\u0103 este <strong>\u00eendep\u0103rtarea p\u0103r\u021bilor verzi sau \u00eencol\u021bite<\/strong>, iar \u00een cazul \u00een care cartoful este foarte afectat, <strong>aruncarea acestuia<\/strong>.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"sigur\"><strong>Este sigur s\u0103 m\u0103n\u00e2nci cartofii verzi?<\/strong><\/h3>\n\n\n\n<p>Dac\u0103 observi doar o <strong>mic\u0103 pat\u0103 verzuie<\/strong>, o po\u021bi \u00eendep\u0103rta ad\u00e2nc cu cu\u021bitul, asigur\u00e2ndu-te c\u0103 elimini complet zona suspect\u0103. Dac\u0103 \u00eens\u0103 cartoful este verde pe o mare parte din suprafa\u021b\u0103, este <strong>mai bine s\u0103 nu-l consumi deloc<\/strong>. La fel \u0219i \u00een cazul \u00een care are <strong>muguri lungi, moi sau \u00eennegrite<\/strong>, deoarece ace\u0219tia sunt foarte concentra\u021bi \u00een solanin\u0103.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Cum po\u021bi preveni apari\u021bia cartofilor verzi?<\/strong><\/h3>\n\n\n\n<p>Pentru a evita formarea cartofilor verzi:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>P\u0103streaz\u0103 cartofii \u00eentr-un loc \u00eentunecos<\/strong>, uscat \u0219i r\u0103coros (8-12\u00b0C).<\/li>\n\n\n\n<li>Nu-i l\u0103sa expu\u0219i la lumina din buc\u0103t\u0103rie sau \u00een pungi transparente.<\/li>\n\n\n\n<li>Nu-i p\u0103stra \u00een frigider \u2013 temperaturile prea joase favorizeaz\u0103 conversia amidonului \u00een zaharuri \u0219i pot accentua dezvoltarea solaninei.<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Concluzie &#8211; evit\u0103 s\u0103 m\u0103n\u00e2nci cartofii care sunt verzi<\/strong><\/h3>\n\n\n\n<p>Evit\u0103 s\u0103 m\u0103n\u00e2nci cartofii care sunt verzi, pot deveni un pericol real pentru s\u0103n\u0103tate dac\u0103 nu sunt trata\u021bi cu aten\u021bie. Solanina prezent\u0103 \u00een ace\u0219tia este o substan\u021b\u0103 natural\u0103, dar toxic\u0103 \u00een cantit\u0103\u021bi mari. De aceea, este esen\u021bial s\u0103 recuno\u0219ti cartofii afecta\u021bi, s\u0103 \u0219tii cum s\u0103-i cure\u021bi sau, \u00een unele cazuri, s\u0103-i arunci f\u0103r\u0103 regret. S\u0103n\u0103tatea ta este mai important\u0103 dec\u00e2t risipa unui cartof.
