Ad\u0103ugarea zah\u0103rului nu are rolul de a \u00eendulci vinul imediat, ci de a <strong>cre\u0219te t\u0103ria alcoolic\u0103<\/strong> atunci c\u00e2nd strugurii nu sunt suficient de dulci. Concentra\u021bia de zah\u0103r \u00een vin se stabile\u0219te dup\u0103 propor\u021biile de mai jos.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>\u00cen mod tradi\u021bional, se adaug\u0103 <strong>1 kilogram de zah\u0103r la 100 litri de must<\/strong>, ceea ce cre\u0219te alcoolul cu aproximativ 0,6\u20130,7% vol.<\/li>\n\n\n\n<li>Cantitatea total\u0103 <strong>se stabile\u0219te \u00een func\u021bie de zah\u0103rul natural al mustului<\/strong>, ideal m\u0103surat cu mustimetrul.<\/li>\n\n\n\n<li>Zah\u0103rul se dizolv\u0103 mai \u00eent\u00e2i \u00eentr-o cantitate mic\u0103 de must cald, apoi se toarn\u0103 \u00een vas.<br><\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>\u26a0\ufe0f Important!<\/strong><\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Zah\u0103rul nu se adaug\u0103 niciodat\u0103 dup\u0103 fermenta\u021bie<\/strong>, deoarece ar provoca refermentare \u0219i stric\u0103 vinul.<\/li>\n\n\n\n<li>Dac\u0103 vrei vin dulce, acesta trebuie stabilizat \u0219i \u00eendulcit ulterior prin tehnici speciale, nu prin zah\u0103r simplu.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"masurare\">Cum se face m\u0103surarea zah\u0103rului din must<\/h2>\n\n\n\n<p>Pentru a m\u0103sura corect zah\u0103rul din must \u0219i a stabili exact c\u00e2t zah\u0103r trebuie ad\u0103ugat, urmeaz\u0103 pa\u0219ii de mai jos. Metoda standard folosit\u0103 de vinificatori este m\u0103surarea densit\u0103\u021bii mustului cu un mustimetru sau zaharometru, pe parcursul procesului de <a href=\"https:\/\/agroland.ro\/c\/cum-se-face-vinul-de-casa-din-struguri\/\">preparare a vinului de cas\u0103<\/a>.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">1. Folose\u0219te un mustimetru calibrat<\/h3>\n\n\n\n<p>Mustimetrul este instrumentul care \u00ee\u021bi arat\u0103 cantitatea de zaharuri fermentescibile din must, exprimat\u0103 \u00een:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>\u00b0Brix<\/li>\n\n\n\n<li>\u00b0Glucos\u0103 + fructoz\u0103 (g\/l)<\/li>\n\n\n\n<li>\u00b0Oe (Oechsle) \u2014 \u00een Rom\u00e2nia se folose\u0219te frecvent scala Brix sau Oechsle.<br><\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">2. Cum se face corect m\u0103surarea<\/h3>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Ia must limpede, f\u0103r\u0103 spum\u0103 \u0219i f\u0103r\u0103 buc\u0103\u021bi de pulp\u0103 (filtrat u\u0219or).<\/li>\n\n\n\n<li>Toarn\u0103 mustul \u00eentr-o eprubet\u0103 cilindric\u0103 p\u00e2n\u0103 la \u00be.<\/li>\n\n\n\n<li>Mustul trebuie s\u0103 aib\u0103 temperatura de 20\u00b0C pentru c\u0103 instrumentele sunt calibrate la aceast\u0103 valoare.<\/li>\n\n\n\n<li>Introdu mustimetrul \u0219i las\u0103-l s\u0103 pluteasc\u0103 liber.<\/li>\n\n\n\n<li>Cite\u0219te valoarea la nivelul lichidului, nu la meniscul ridicat.<\/li>\n<\/ol>\n\n\n\n<h3 class=\"wp-block-heading\">3. Interpretare rapid\u0103 a valorilor<\/h3>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>\u25b6 <\/strong>\u00cen \u00b0Brix<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1\u00b0Brix \u2248 10 g zah\u0103r\/litru must<\/li>\n\n\n\n<li>Pentru un vin de 11\u201312% alcool, ai nevoie de aprox. 200\u2013210 g zah\u0103r\/l \u00een mustul ini\u021bial.<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">4. C\u00e2t zah\u0103r trebuie s\u0103 adaugi<\/h3>\n\n\n\n<p>Formula standard: Zah\u0103r de ad\u0103ugat (g\/l) = Zah\u0103r necesar \u2013 Zah\u0103r existent. <strong>1 kg zah\u0103r ridic\u0103 \u00b0Brix-ul la 10 litri de must cu aproximativ 4\u00b0Brix&nbsp; (sau ~40 g\/l zah\u0103r ad\u0103ugat = +4 g zah\u0103r\/l \u00een must).<\/strong><\/p>\n\n\n\n<h3 class=\"wp-block-heading\">5. Exemplu de calcul complet<\/h3>\n\n\n\n<p>S\u0103 zicem c\u0103 ai:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>100 litri de must<\/strong><\/li>\n\n\n\n<li><strong>M\u0103sur\u0103toare: 16\u00b0Brix \u2192 160 g\/l zah\u0103r<\/strong><\/li>\n\n\n\n<li><strong>\u021ainta: 210 g\/l pentru vin de 12% vol.<\/strong><\/li>\n<\/ul>\n\n\n\n<p>Diferen\u021b\u0103:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>210 \u2013 160 = 50 g\/l trebuie ad\u0103ugate.<\/strong><\/li>\n\n\n\n<li><strong>Pentru 100 litri: 50 g \u00d7 100 = 5.000 g deci 5 kg zah\u0103r.<\/strong><\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"calitate\">Scade calitatea vinului dac\u0103 adaugi zah\u0103r?<\/h2>\n\n\n\n<p>Ad\u0103ugarea de zah\u0103r <strong>nu scade automat calitatea vinului<\/strong>, dar o poate afecta dac\u0103 este f\u0103cut\u0103 gre\u0219it sau \u00een exces. Zaharificarea moderat\u0103 este o practic\u0103 veche, <strong>folosit\u0103 mai ales \u00een anii \u00een care strugurii nu au suficient zah\u0103r natural<\/strong>. Totu\u0219i, exist\u0103 c\u00e2teva aspecte importante, men\u021bionate mai jos.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>&nbsp;C\u00e2nd NU scade calitatea vinului<\/strong><\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>C\u00e2nd se pune o cantitate mic\u0103 (de obicei 1\u20132 kg la 100 L).<\/li>\n\n\n\n<li>C\u00e2nd scopul este doar cre\u0219terea t\u0103riei alcoolice, pentru a asigura stabilitatea vinului.<\/li>\n\n\n\n<li>C\u00e2nd zah\u0103rul este dizolvat corect \u0219i ad\u0103ugat \u00een must, \u00eenainte de fermenta\u021bie.<\/li>\n\n\n\n<li>C\u00e2nd mustul are valoare mic\u0103 la mustimetru \u0219i nu ar fermenta complet f\u0103r\u0103 ajutor.<br><\/li>\n<\/ul>\n\n\n\n<p>\u00cen aceste situa\u021bii, vinul \u00ee\u0219i p\u0103streaz\u0103 naturale\u021bea \u0219i stabilitatea, f\u0103r\u0103 s\u0103 capete gust artificial.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>&nbsp;C\u00e2nd poate sc\u0103dea calitatea vinului<\/strong><\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>C\u00e2nd se adaug\u0103 prea mult zah\u0103r: vinul devine ars, greu, cu alcool prea ridicat.<\/li>\n\n\n\n<li>C\u00e2nd se pune zah\u0103r \u00een timpul sau dup\u0103 fermenta\u021bie \u2013 poate duce la refermentare, tulburare sau gust nepl\u0103cut.<\/li>\n\n\n\n<li>C\u00e2nd se folose\u0219te zah\u0103r pentru a masca strugurii necop\u021bi sau materie prim\u0103 slab\u0103.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Concluzie &#8211; zah\u0103rul nu stric\u0103 vinul dac\u0103 este folosit corect<\/h2>\n\n\n\n<p>Zah\u0103rul devine o problem\u0103 doar atunci c\u00e2nd se exagereaz\u0103 sau se folose\u0219te pentru a \u201ep\u0103c\u0103li\u201d calitatea strugurilor. Dac\u0103 vrei, \u00ee\u021bi pot spune exact c\u00e2\u021bi litri de vin vei ob\u021bine \u0219i ce t\u0103rie alcoolic\u0103 iese \u00een func\u021bie de c\u00e2t zah\u0103r adaugi.
