Pentru ca fumul s\u0103 se \u201eprind\u0103\u201d eficient, suprafa\u021ba c\u0103rnii trebuie s\u0103 fie:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>curat\u0103<\/li>\n\n\n\n<li>zv\u00e2ntat\u0103, dar nu complet uscat\u0103<\/li>\n\n\n\n<li>u\u0219or umed\u0103 la atingere<\/li>\n<\/ul>\n\n\n\n<p>Dac\u0103 suprafa\u021ba este prea uscat\u0103, fumul nu ader\u0103. Dac\u0103 este prea umed\u0103, produsul se acre\u0219te sau cap\u0103t\u0103 gust amar.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Cum se prinde efectiv fumul pe suprafa\u021ba c\u0103rnii<\/h2>\n\n\n\n<p>Carnea gras\u0103 re\u021bine mai bine compu\u0219ii aromatici, motiv pentru care produsele din porc sunt cele mai populare la afumat. Fixarea fumului este influen\u021bat\u0103 de:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>umiditatea aerului din afum\u0103toare<\/strong><\/li>\n\n\n\n<li><strong>temperatura fumului<\/strong><\/li>\n\n\n\n<li><strong>durata afum\u0103rii<\/strong><\/li>\n\n\n\n<li><strong>tipul de carne \u0219i con\u021binutul de gr\u0103sime<\/strong><\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"granule\">Cum trebuie s\u0103 fie pele\u021bii sau granulele de afumare<\/h2>\n\n\n\n<p>Pentru afumarea c\u0103rnii, combustibilul este esen\u021bial Se folosesc <a href=\"https:\/\/agroland.ro\/casa-si-curte\/454782-pelei-afumare-fuchs-foi-de-dafin-500-gr.html\">pele\u021bi de afumare<\/a> sau <a href=\"https:\/\/agroland.ro\/casa-si-curte\/454053-granule-pentru-afumare-15-kg.html\">granulele de afumare,<\/a> iar acestea trebuie s\u0103 fie:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>din <strong>lemn 100% natural<\/strong><\/li>\n\n\n\n<li>f\u0103r\u0103 adezivi, lacuri, vopsele sau r\u0103\u0219ini<\/li>\n\n\n\n<li>bine uscate<\/li>\n\n\n\n<li>cu ardere lent\u0103, f\u0103r\u0103 flac\u0103r\u0103<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Esen\u021be de lemn recomandate:<\/strong><\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Fag<\/strong> \u2013 standardul clasic, arom\u0103 echilibrat\u0103<\/li>\n\n\n\n<li><strong>Stejar<\/strong> \u2013 arom\u0103 intens\u0103, potrivit pentru carne ro\u0219ie<\/li>\n\n\n\n<li><strong>Cire\u0219<\/strong> \u2013 arom\u0103 dulceag\u0103, culoare frumoas\u0103<\/li>\n\n\n\n<li><strong>M\u0103r<\/strong> \u2013 ideal pentru pas\u0103re \u0219i pe\u0219te<\/li>\n\n\n\n<li><strong>Prun<\/strong> \u2013 foarte apreciat \u00een afumarea tradi\u021bional\u0103<\/li>\n<\/ul>\n\n\n\n<p>Esen\u021bele de r\u0103\u0219inoase (brad, pin, molid) sunt total contraindicate.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"proces\">Procesul de afumare \u2013 etape esen\u021biale<\/h2>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>1. Preg\u0103tirea c\u0103rnii<\/strong><\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>tran\u0219are corect\u0103<\/li>\n\n\n\n<li>s\u0103rare uscat\u0103 sau saramur\u0103 (3\u201314 zile, \u00een func\u021bie de produs)<\/li>\n\n\n\n<li>cl\u0103tire \u0219i zv\u00e2ntare 24\u201348 de ore<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>2. Ag\u0103\u021barea c\u0103rnii<\/strong><\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>se folosesc c\u00e2rlige metalice sau sfoar\u0103 alimentar\u0103<\/li>\n\n\n\n<li>buc\u0103\u021bile nu trebuie s\u0103 se ating\u0103 \u00eentre ele<\/li>\n\n\n\n<li>circula\u021bia fumului trebuie s\u0103 fie uniform\u0103<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>3. Afumarea propriu-zis\u0103<\/strong><\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>fumul trebuie s\u0103 fie <strong>rece sau moderat cald<\/strong>, nu fierbinte<\/li>\n\n\n\n<li>culoarea fumului: <strong>alb-alb\u0103strui<\/strong>, niciodat\u0103 negru<\/li>\n\n\n\n<li>intensitate constant\u0103, f\u0103r\u0103 \u00eentreruperi bru\u0219te<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">C\u00e2te zile st\u0103 carnea la afumat<\/h2>\n\n\n\n<p>Afumarea se face adesea intermitent, cu pauze de aerisire. Durata depinde de tipul produsului:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>C\u00e2rna\u021bi<\/strong>: 1\u20133 zile<\/li>\n\n\n\n<li><strong>Sl\u0103nin\u0103<\/strong>: 3\u20135 zile<\/li>\n\n\n\n<li><strong>\u0218unc\u0103 sau ceaf\u0103<\/strong>: 5\u201310 zile<\/li>\n\n\n\n<li><strong>Pe\u0219te<\/strong>: 6\u201324 ore<\/li>\n\n\n\n<li><strong>Br\u00e2nzeturi<\/strong>: 2\u20138 ore<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Cum verifici dac\u0103 afumarea este corect\u0103<\/strong><\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>miros pl\u0103cut, f\u0103r\u0103 am\u0103r\u0103ciune<\/li>\n\n\n\n<li>culoare uniform\u0103<\/li>\n\n\n\n<li>suprafa\u021b\u0103 uscat\u0103 la exterior<\/li>\n\n\n\n<li>gust echilibrat, f\u0103r\u0103 note acre<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Ce carne \u0219i produse se preteaz\u0103 pentru afumare<\/strong><\/h2>\n\n\n\n<p><strong>Tipuri de carne potrivite:<\/strong> porc (cea mai frecvent\u0103), vit\u0103, oaie, pas\u0103re, v\u00e2nat, pe\u0219te.<\/p>\n\n\n\n<p><strong>Produse care se pot afuma:<\/strong> \u0219unc\u0103, sl\u0103nin\u0103, costi\u021b\u0103, c\u00e2rna\u021bi, caltabo\u0219i, tob\u0103, pastram\u0103, pe\u0219te \u00eentreg sau file, br\u00e2nzeturi maturate, unele legume (ardei, usturoi).<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"reteta\">Re\u021bet\u0103 afumarea c\u0103rnii de porc<\/h2>\n\n\n\n<p><strong>Ingrediente:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>5 kg carne de porc (ceaf\u0103, piept, pulp\u0103 sau costi\u021b\u0103)<\/li>\n\n\n\n<li>200\u2013250 g sare grunjoas\u0103 neiodat\u0103<\/li>\n\n\n\n<li>1 lingur\u0103 piper boabe zdrobit<\/li>\n\n\n\n<li>3\u20134 foi de dafin (op\u021bional)<\/li>\n\n\n\n<li>usturoi (op\u021bional, pentru frecare)<\/li>\n\n\n\n<li>lemn sau pele\u021bi din <strong>fag<\/strong> (eventual amestec cu prun)<\/li>\n<\/ul>\n\n\n\n<p><strong>Mod de preparare:<\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li><strong>S\u0103rarea c\u0103rnii &#8211; <\/strong>\u00a0freac\u0103 buc\u0103\u021bile de carne cu sare \u0219i condimente. A\u0219az\u0103-le \u00eentr-un vas curat, acoper\u0103 \u0219i \u021bine-le la rece 5\u20137 zile. \u00centoarce carnea zilnic pentru s\u0103rare uniform\u0103.<\/li>\n\n\n\n<li><strong>Zv\u00e2ntarea &#8211; <\/strong>scoate carnea din sare, cl\u0103te\u0219te rapid cu ap\u0103 rece \u0219i las-o la zv\u00e2ntat 24\u201348 de ore \u00eentr-un loc aerisit, r\u0103coros. Suprafa\u021ba trebuie s\u0103 fie uscat\u0103, dar nu tare.<\/li>\n\n\n\n<li><strong>Ag\u0103\u021barea &#8211; <\/strong>aga\u021b\u0103 buc\u0103\u021bile pe c\u00e2rlige metalice sau sfoar\u0103 alimentar\u0103, astfel \u00eenc\u00e2t s\u0103 nu se ating\u0103 \u00eentre ele.<\/li>\n\n\n\n<li><strong>Afumarea &#8211; <\/strong>afum\u0103 carnea 3\u20135 zile, c\u00e2te 3\u20134 ore pe zi, cu fum rece sau moderat cald. Fumul trebuie s\u0103 fie deschis la culoare, constant, f\u0103r\u0103 flac\u0103r\u0103.<\/li>\n\n\n\n<li><strong>Odihna produsului &#8211; <\/strong>dup\u0103 afumare, las\u0103 carnea la aerisit 2\u20133 zile \u00eenainte de consum, pentru stabilizarea gustului.<\/li>\n<\/ol>\n\n\n\n<p>Afumarea, realizat\u0103 corect, este un proces complex care \u00eembin\u0103 tradi\u021bia cu \u0219tiin\u021ba alimentar\u0103. Respectarea etapelor \u0219i a materiilor prime asigur\u0103 produse sigure, gustoase \u0219i cu o durat\u0103 de p\u0103strare \u00eendelungat\u0103.
