Prin ad\u0103ugarea de cheag \u00een lapte, structura acestuia se transform\u0103. <strong>Laptele lichid devine o mas\u0103 gelatinoas\u0103, numit\u0103 coagul sau ca\u0219.<\/strong> Din acest punct \u00eencepe procesul propriu-zis de ob\u021binere a br\u00e2nzei, prin t\u0103ierea coagulului, scurgerea zerului \u0219i maturarea ulterioar\u0103.<\/p>\n\n\n\n<p>\u00cen mod tradi\u021bional, cheagul era extras din stomacul vi\u021beilor sau mieilor. Ast\u0103zi exist\u0103 mai multe tipuri de cheag, inclusiv variante microbiene sau sintetice, care sunt mai u\u0219or de utilizat \u0219i potrivite pentru produc\u021bia modern\u0103.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"feluri\">De c\u00e2te feluri este cheagul<\/h2>\n\n\n\n<p>Exist\u0103 mai multe <strong>tipuri de cheag<\/strong>, fiecare cu particularit\u0103\u021bi de utilizare:<\/p>\n\n\n\n<p><strong>1. <\/strong><a href=\"https:\/\/agroland.ro\/cresterea-animalelor\/693-cheag-ideal-lichid-100ml.html\">Cheag lichid<\/a><strong> &#8211; <\/strong>este foarte u\u0219or de dozat \u0219i preferat \u00een gospod\u0103rii sau ateliere mici. <strong>Se \u00eenc\u0103lze\u0219te laptele la 35\u00b0C \u0219i se adaug\u0103 cu o sering\u0103 2 ml de cheag lichid la 10 l lapte<\/strong>. Este important ca vasele folosite la \u00eenchegare s\u0103 nu fie sp\u0103late cu detergen\u021bi, deoarece reziduurile pot afecta procesul de coagulare.<\/p>\n\n\n\n<p><strong>2. <\/strong><a href=\"https:\/\/agroland.ro\/cresterea-animalelor\/3093-fromase-pentru-cheagul-microbian.html\">Cheag microbian<\/a><strong> &#8211;<\/strong> este produs cu ajutorul microorganismelor \u0219i este foarte utilizat \u00een prezent. Este potrivit pentru vegetarieni \u0219i ofer\u0103 rezultate constante. <strong>Sunt necesare 2 gr pentru \u00eenchegarea a 100 l lapte. Se dizolv\u0103 cele 2 gr \u00een 200 ml ap\u0103 rece, f\u0103r\u0103 clor<\/strong>. Solu\u021bia se las\u0103 20 de minute \u00een repaus, dup\u0103 care se adaug\u0103 la 100 l lapte \u00eenc\u0103lzit la 35\u00b0C. \u00cenchegarea dureaz\u0103 aproximativ 40 &#8211; 45 minute.<br>Dac\u0103 utiliza\u021bi culturi lactice, acestea se adaug\u0103 \u00een lapte \u00eenainte de ad\u0103ugarea de <strong>cheag<\/strong>. Se recomand\u0103 pasteurizarea laptelui \u00eenainte de coagulare.<\/p>\n\n\n\n<p><strong>3. Cheag animal &#8211; e<\/strong>ste varianta clasic\u0103, ob\u021binut\u0103 din stomacul rumeg\u0103toarelor tinere. Este apreciat pentru capacitatea de a produce br\u00e2nzeturi cu textur\u0103 \u0219i arom\u0103 tradi\u021bional\u0103. Se folose\u0219te mai ales \u00een produc\u021bia artizanal\u0103. <strong>Se utilizeaz\u0103 \u00een propor\u021bie de aproximativ 2-3 ml la 10 litri de lapte, la o temperatur\u0103 de aproximativ 35\u00b0C<\/strong>, iar coagularea dureaz\u0103 \u00een jur de 45 de minute.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"cum-se-foloseste\">Cum se folose\u0219te cheagul pentru a face br\u00e2nz\u0103<\/h2>\n\n\n\n<p>Procesul de ob\u021binere a br\u00e2nzei \u00eencepe cu \u00eenc\u0103lzirea laptelui la aproximativ 35\u00b0C, temperatura optim\u0103 pentru activarea cheagului. \u00cenainte de ad\u0103ugarea de <strong>cheag<\/strong>, laptele poate fi pasteurizat pentru siguran\u021b\u0103 \u0219i stabilitate microbiologic\u0103. Dac\u0103 se folosesc culturi lactice, acestea se introduc primele \u00een lapte.<\/p>\n\n\n\n<p>Cheagul se adaug\u0103 \u00een cantitatea corect\u0103, \u00een func\u021bie de tipul utilizat \u0219i de volumul de lapte. Dup\u0103 omogenizare, laptele se las\u0103 \u00een repaus p\u00e2n\u0103 c\u00e2nd se formeaz\u0103 coagulul. Timpul de \u00eenchegare variaz\u0103, dar \u00een general dureaz\u0103 \u00eentre 30 \u0219i 45 de minute.<\/p>\n\n\n\n<p>Dup\u0103 coagulare, masa ob\u021binut\u0103 se taie pentru a permite eliminarea zerului. Ca\u0219ul se preseaz\u0103 \u0219i se s\u0103reaz\u0103, apoi se poate consuma proasp\u0103t sau se las\u0103 la maturat pentru a ob\u021bine diverse tipuri de br\u00e2nzeturi.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Pe scurt<\/h2>\n\n\n\n<p>Cheagul este un element indispensabil \u00een producerea br\u00e2nzeturilor, indiferent c\u0103 vorbim de gospod\u0103rii mici sau produc\u021bie profesional\u0103. Alegerea tipului de cheag \u0219i respectarea instruc\u021biunilor de utilizare asigur\u0103 o coagulare corect\u0103 \u0219i o br\u00e2nz\u0103 de calitate.
